Preparation
- Preheat the oven to 200 C (392 F)
- Chop the green beans into 1cm pieces.
- Drain and rinse the black beans.
- Coat the turkey in 1/2 a tbsp of olive oil and season with salt and pepper. Wrap in foil and place in the oven to bake for 35 minutes.
- Boil some water in a medium saucepan. Add the rice and green beans and boil for 20 minutes.
- Heat 1 tbsp of olive oil in a large frying pan. Add the onion and fry until softened and browned. Add the garlic and fry for a further minute.
- Add the eggs with a little salt (optional) and pepper and whisk until they begin to scramble.
- Add the black beans along with the cooked rice and green beans, and stir well to coat in the eggs. Slice the turkey and combine with the rice mixture. Serve in a bowl.
