Duck Breast |
1. Slice duck breast into 2cm thick strips. Prepare a large saucepan of water to the boil.
2. Season the duck breast with salt (optional) and pepper.
3. Heat the olive oil in a frying pan over a medium to high heat ensure the oil is hot then add the duck and fry. Stir occasionally until the duck is cooked through and lightly golden. This is around 3 minutes.
4. At the same time add the green beans into the saucepan of boiling water and allow to simmer for a minute.
5. Then drain the green beans in a sieve and rinse under cold running water.
6. Put the green beans into a bowl and add walnut oil, walnuts and chopped sundried tomatoes.
7. Season with salt (optional) and pepper, then toss and mix together.
8. Plate the green beans and walnuts and top with the duck.
