1. In the crockpot, combine the beef, onion, garlic, oregano, bay leaf and a pinch of salt
2. Cover and cook on low for 7 hours
3. Before serving, shred the cabbage, and slice the radishes and coriander, toss together with the lime juice and a pinch of salt
4. Warm the tortillas in the oven or microwave
5. Transfer the beef to a medium bowl and shred
6. Fill the tortillas with the beef and slaw
