1. Trim fat from steak. Mushrooms should be roughly chopped. Rub olive oil over the steak and season with salt and pepper.
2. Place the steak in a pre-heated hot frying pan and cook for 3 minutes on each side. This is equivalent to medium rare steak. Increase the time for medium or well done. Place cooked steak on a plate to rest.
3. Wipe out the frying pan and then add remaining olive oil and place over a medium to high heat.
4. Add the mushrooms. Cook for 1 – 2 minutes and ensure to turn them over a couple of times until they are lightly coloured. Season with salt and pepper and increase heat to maximum.
5. Add the spinach in the pan and turn until it is almost fully wilted. Pour in the double cream and let it bubble up.
6. Add salt and pepper to taste and then serve.
