Kidney beans (canned)
Cherry Tomatoes
Spinach
Red Bell Pepper (capsicum)
Feta Cheese (reduced fat)
Fish, tuna, white, canned in water, drained solids
Onion
Avocado
Preparation
  1. Drain and rinse the beans
  2. Slice the cherry tomatoes into halves
  3. Dice the pepper and onion
Method
  1. Cook the couscous according to packet instructions
  2. Combine the couscous with all the ingredients except the avocado and feta and mix well
  3. Top with the avocado and feta
