Preparation
- Drain and rinse the beans
- Slice the cherry tomatoes into halves
- Dice the pepper and onion
- Cook the couscous according to packet instructions
- Combine the couscous with all the ingredients except the avocado and feta and mix well
- Top with the avocado and feta
