Ingredients

Spaghetti
Peas, Snow/Snap/ Mangetout
Red Bell Pepper (capsicum)
Cilantro (Coriander) leaves
Peanuts
Peanut Butter, Smooth Style, With Salt
Coconut milk (liquid expressed from grated meat and water)
Lime Juice
Soy Sauce
Chili Powder
1. Cook the spaghetti according to packet instructions. Drain and set aside to cool.

2. In a medium bowl, stir together peanut butter, coconut milk, lime juice, soy sauce and chilli powder until smooth.

3. Add cooked spaghetti, snow peas, red pepper and coriander. Toss to coat.

4. Sprinkle the peanuts over the top before serving.
