Sweet Potato
Smoked chorizo sausage
Fresh Rosemary
Chili Peppers
Coconut Oil
Sea Salt
1. Peel the sweet potato then cut in half and boil in saucepan of water for about 10 minutes. Allow to cool and cut into small pieces. 

2. At the same time cut the Chorizo sausage in 1 cm pieces. Rinse and finely chop the rosemary. 

3. Halve the chili pepper, remove the ribs and seeds and dice. 

4. Now break the eggs into a mixing bowl and add salt and then beat well. 

5. Add coconut oil to frying pan and use medium heat. Add the rosemary and diced chili pepper and cook for 60 seconds. 

6. Add the sweet potato pieces and Chorizo and cook 1 to 2 minutes.

7. Add the beaten eggs. Decrease heat to low and cook for 5 minutes. 

8. When happy with consistency of omelette transfer to plate and garnish to your choice.
