Cheddar Cheese
Parsley
Egg(s)
Chorizo
Potato, flesh and skin
Olive Oil
1. Dice the potato into small cubes. Cook for 8 minutes or until tender in the middle. Allow to drain and steam dry. 

2. Heat the oil in the omelette pan, add the chopped chorizo and cook for 2 minutes. 

3. Then add the potato and cook for a further 5 minutes. 

4. Remove the contents of the pan. Wipe the pan down and cook the omelette. 

5. When almost cooked, empty the chorizo and potato mix along with the parsley and cheese onto one half of the omelette. 

6. Fold the omelette and then allow to cook for a further 30 secs - 1 minute.
