Ingredients

Coconut Oil
Chorizo
Chicken Breast
Table Salt
Black Pepper
Cherry Tomatoes
Baby Spinach
Mozzarella Cheese (whole milk)
Pine Nuts, dried
1. Finely dice the chorizo, cut chicken breast into 1cm slices, slice cherry tomatoes in half and ensure mozzarella ball is torn into chunks 

2. Add coconut oil to a frying pan using a medium to high heat 

3. Add the chorizo and fry for a minute 
 
4. Add onion and fry for another minute 
 
5. Increase heat and add the chicken, along with a large pinch of salt and pepper 

6. Stir-fry for around 3 minutes so that the chicken is almost completely cooked through 

7. Now add cherry tomatoes and cook for a minute 

8. Add spinach and stir through until fully wilted 

9. Use a wooden spoon to make small gaps in the chicken and vegetables so that small parts of the mozzarella can be added 

10. Turn off the heat and let the mozzarella melt before spooning the mixture onto a plate 

11. Dress by scattering over the pine nuts
