Ingredients

Ciabatta
Dijon Mustard (Whole Grain)
Chickpeas (garbanzo beans, bengal gram), canned, rinsed in tap water, drained
Paprika
Lemon Juice
Ground Black Pepper
Table Salt
Tomatoes, Red, Ripe
Romaine Lettuce
1. Mash the chickpeas in a small bowl using the back of a fork. Mash in the lemon juice, paprika, black pepper and salt. 

2. Spread the mustard onto one side of each slice of bread. On two slices of bread, spread on the mashed chickpeas and layer on the lettuce and tomato. 

3. Place the other slices of bread on top and press down to make two sandwiches.
