Ingredients

Chicken Breast
Cucumber
Tomatoes, Grape
Red Bell Pepper (capsicum)
Fresh Mint Leaves
Lemon
Hummus, commercial
Wholegrain Barley Wrap
1. Grill the chicken for 5-6 minutes on each side, then cut into cubes or slices. 

2. Ensure that the cucumber is trimmed and chopped. Slice tomatoes into quarters. Chop the red pepper. Roughly chop the mint leaves and juice the lemon. 

3. Add the chicken, cucumber, tomatoes, red pepper, mint and juice from lemon in a bowl. Season to taste with pepper. 

4. Toast the wholegrain wrap. 

5. Plate the salad with toasted wrap and hummus.
