Cauliflower
Chorizo
Chicken Breast
Onion
Green Bell Pepper (capsicum)
Red Bell Pepper (capsicum)
Chopped Tomatoes (canned)
Garlic
Chicken Stock
Bay Leaf
Cajun Seasoning
Crustaceans, shrimp, mixed species
1. In a saucepan, bring the stock to a simmer

2. Cut the chicken into small bite sized pieces

3. In a large skillet, brown the chicken with 1 tsp of olive oil, then add the chorizo, onion, peppers and garlic, cook for 4 minutes

4. Add the tomatoes, bay leaf, cajun spice and a pinch of salt and pepper

5. Stir in the cauliflower and stock, cook for 10 minutes

6. Then stir in the shrimp and cook for 4 minutes
