1. Dice the onion and apple.
2. Cook the chicken breast and chopped coarsely.
3. Heat the coconut oil in a large skillet over medium-high heat and saute the onion until softened, about 2 minutes.
4. Stir in diced apple, tomatoes (including the juice), chicken stock or broth, curry powder and lemon juice.
5. Reduce the heat, and simmer the mixture, uncovered for about 30 minutes, then add chicken and cooked for 5 more minutes or until the chicken is heated through.
