Ingredients

Chicken Breast
Garlic
Onion
Red Bell Pepper (capsicum)
Peanut Butter, Smooth Style, With Salt
Soy Sauce (tamari)
Chicken Stock
Broccoli
Peanuts
Olive Oil
1. Heat the olive oil in a skillet over a medium-high heat

2. Cut the chicken into chunks, add to the skillet and fry for 4 minutes

3. Add the garlic, onion, bell pepper and broccoli and stir fry for 4 minutes

4. Warm the peanut butter in the microwave in a small bowl, then mix in the tamari and the chicken stock

5. Pour the peanut sauce over the chicken and vegetables and toss to coat, cook for a further 3 minutes

6. Top with the peanuts before serving
