1. Heat 1 tsp of olive oil on a frying pan over a medium heat.

2. Whisk together the egg whites, mixed herbs, and a pinch of salt and pepper.

3. Add the egg mixture to the pan and add the grated cheese and spinach on top. Leave to cook for about 6 minutes, or until the egg is set.
