1. To prepare, grease a pan with butter or coconut oil maintain on a low heat. Rinse and drain the fresh chives and chop into small pieces.
2. At the same time break eggs into a mixing bowl and add salt and pepper. Beat together well.
3. Add the chopped chives into the eggs and pour in the pan.
4. Use a wooden spoon or similar to create the omelette by bringing in the mix from the side towards the centre for 30 seconds.
5. Add crumbled feta cheese while the omelette is a bit soft.
6. Fold the omelette over and cook for another 30 seconds to a minute until happy with consistency.
