1.     Prepare an oven to heat 175 C (347 F). Roughly chop the ham. Grate the cheese. Finely chop the shallot.

2.     Break the eggs into a mixing bowl and season with salt and pepper and then beat well.

3.     Add the ham to the bowl.

4.     Add the shallot to a greased ovenproof pan with coconut oil. Let it caramelize until it gets slightly brown. Reduce the heat under the pan.

5.     Add eggs to cover the pan. Use a spatula or similar to bring in the omelette mixture from the sides towards the centre for the first 30 seconds.

6.     Add over the pan half of the grated cheese and cook for about 60 seconds.

7.     Remove pan from heat and fold over the omelette.

8.     Add over the with the remaining cheese and put the pan in the oven for about 5 minutes.

9.     Take out of oven and plate and garnish to your choice.
