Cajun Seasoning |
1. Drain the water from the tofu and press out the moisture using paper towels. Cut into 1cm slices.
2. Drain and rinse the black beans.
3. In a medium-sized bowl, mix together the cajun spice with a pinch of salt and pepper and 2 tbsp of water. Add the tofu slices and gently mix to coat. Leave to soak for 10 minutes.
4. Boil some water in medium-sized saucepan and add the green beans and broccoli. Boil for 20 minutes, then drain.
5. Heat 1 tsp of olive oil in a frying pan. Add the black beans and the tofu (along with any remaining marinade). Cook each side of the tofu for 3 minutes and make sure the beans are being stirred frequently.
6. Serve the tofu and black beans on a plate alongside the green beans and broccoli.
