Cajun Tofu and Black Beans with Sweet Potato Mash

Cajun Seasoning |
1. Drain the water from the tofu and press out the moisture using paper towels. Cut into 1cm slices.
2. Peel the sweet potato and chop into small chunks.
3. Drain and rinse the black beans.
4. In a medium-sized bowl, mix together the cajun spice with a pinch of salt and pepper and 2 tbsp of water. Add the tofu slices and gently mix to coat. Leave to soak for 10 minutes.
5. Boil some water in a medium size saucepan. Add the sweet potato chunks and boil for 25 minutes.
6. Boil some water in another saucepan and add the green beans. Boil for 20 minutes, then drain.
7. Heat 1 tsp of olive oil in a frying pan. Add the black beans and the tofu (along with any remaining marinade). Cook each side of the tofu for 3 minutes and make sure the beans are being stirred frequently.
8. Drain the sweet potatoes, add a pinch of salt and pepper, then mash using the back of a fork.
9. Serve the tofu and black beans on a plate alongside the sweet potato mash and green beans.
