1. Add the chicken, potatoes and garlic to a medium bowl, and sprinkle with the stock cube (crumbled), cajun spice and a pinch of salt and pepper
2. Drizzle over the olive oil and toss everything to coat well
3. Place in the fridge for 30 minutes (optional)
4. Preheat the oven to 200 C (392 F)
5. Place in the oven and bake for 25 minutes
6. Lower the heat to 160 C (320 F) and add the red onions, continue to bake for 15 minutes
