1. Heat the oil over a medium heat in a skillet
2. Add the sausages and cook until brown on all sides
3. Chop up all the vegetables using a food processor, then add to the skillet with the sausages
4. Cover and cook for 15 minutes, mixing often
5. Meanwhile, cook the eggs to your liking in a separate pan
6. Serve the sausages and vegetables with the eggs on top
