Ingredients

Sliced Ham (11% fat)
Egg(s)
Tomatoes, Red, Ripe
Onion
Red Bell Pepper (capsicum)
Red Pepper Flakes (Chili Flakes)
Olive Oil
Salsa (mild)
1. Heat the olive oil in a skillet placed over a medium-high heat

2. Cook the onions, peppers and chili flakes for 6 minutes, then add the tomato and cook for a further 2 minutes

3. In a bowl, whisk the eggs and pour them into the skillet

4. Using a spatula, scramble the eggs until cooked through

5. Roll the ham slices with some of the egg mixture inside, then place back into the skillet and cook until slightly brown

6. Serve the ham rolls with salsa on the side
