1. Drain and rinse the black beans
2. Peel the sweet potato and chop into small chunks
3. Boil some water in a medium size saucepan. Add the sweet potato chunks and boil for 25 minutes.
4. Boil some water in another saucepan and add the green beans. Boil for 8 minutes, then drain.
5. Place the black beans into a small microwave proof bowl. Microwave for 2 minutes.
6. Drain the sweet potatoes, add a pinch of salt and pepper, then mash using the back of a fork.
7. Serve the black beans on a plate alongside the sweet potato mash and green beans.
