Ingredients

Black Beans (canned)
Sweet Potato
Broccoli
1. Drain and rinse the black beans

2. Peel the sweet potato and chop into small chunks

3. Boil some water in a medium size saucepan. Add the sweet potato chunks and boil for 25 minutes.

4. Boil some water in another saucepan and add the broccoli. Boil for 10 minutes, then drain.

5. Place the black beans into a small microwave proof bowl. Microwave for 2 minutes.

6. Drain the sweet potatoes, add a pinch of salt and pepper, then mash using the back of a fork.

7. Serve the black beans on a plate alongside the sweet potato mash and broccoli.
