Ingredients

Pearled Barley
Tomatoes, Red, Ripe
Olive Oil
Ground Beef (15% fat)
Onion
White Button Mushrooms
Beans, Green Snap
Vegetable stock/broth
Soy Sauce (reduced salt)
1. Slice tomato

2. Chop onion

3. Slice mushrooms

4. Cook barley according package directions

5. Heat olive oil in a medium frying pan over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until browned.

6. Add onion, mushrooms and green beans, and cook until beans are tender

7. Add the vegetable stock and soy sauce to cooked barley and add to the meat/vegetable mixture

8. Serve immediately with sliced tomato on the side
