1. Roast bacon in pan for about 5 minutes
2. At the same time break eggs into bowl. Season with salt and pepper and beat together.
3. Turn the bacon over when it is golden and decrease heat.
4. Add the eggs to cover the pan.
5. Use a wooden spoon or similar to create the omelette by bringing in the mix from the side towards the centre for 30 seconds.
6. Add fine slices of olives and fold the omelette over and cook for another minute.
7. When happy with consistency plate the omelette.
