Ingredients

Flour Tortilla(s)
Avocado
Baby Spinach
Arugula (Rocket)
Tomatoes, Red, Ripe
Red Chilli Pepper
Green Onions/Spring Onions or Scallions (including tops and bulb)
Fresh Coriander
Lime Juice
Table Salt
Ground Black Pepper
1. For the tomato salsa, chop the tomato into chunks and finely slice the chilli and coriander. In a small bowl, mix together the tomatoes, spring onions, chilli, coriander and lime juice. Set aside.

2. Mash or slice the avocado and spread down the middle of each wrap. Season with salt and pepper.

3. Add the arugula, spinach, and tomato salsa.

4. Carefully roll up the wraps and slice in half.
