Ingredients

Olive Oil
Lemon Juice
Salt
Black Pepper
Avocado
Prawns (cooked)
Green Onions/Spring Onions or Scallions (including tops and bulb)
Baby Rocket
1. Finely slice the spring onion

2. To make the dressing, in a small bowl, combine the olive oil, lemon juice and a pinch of salt and pepper.

3. To make the salad, in a serving bowl, add the avocado, prawns, spring onions and rocket. Gently combine.

4. Drizzle the dressing over the salad and serve.
