Ingredients

Egg White(s)
Avocado
Cheddar Cheese
Baby Spinach
Olive Oil
1. In a bowl, beat the egg whites together with a pinch of salt and pepper

2. Heat 1 tsp of olive oil in a frying pan over a medium heat. Pour the egg mixture into the pan and cook for 2-3 minutes, then flip over using a spatula. Spread the avocado (mashed) over one half of the egg and top with cheese. Fold over to cover the avocado and cheese.

3. Serve on a plate alongside the baby spinach
