Ingredients

Login Extra Firm Tofu
Login Courgette (Zucchini)
Login Basmati Rice
Login Paprika
Login Curry Powder
Login Soy Sauce
Login Olive Oil

Preparation:

  1. Press the moisture out of the tofu using paper towels, then cut into thin slices or bite size chunks
  2. Grate the courgette

Method:

  1. Cook the rice according to packet instructions
  2. Heat a wok over a medium to high heat, then add the olive oil
  3. Add the courgette to the wok and cook for 2 minutes
  4. Move the courgette to the side of the wok and add the tofu to fry for 5 minutes
  5. Combine the tofu and courgette, then add the paprika, curry powder and soy sauce, cook for 2 minutes
  6. Add the cooked rice to the wok and gently mix to combine
  7. Serve whilst hot
