  1. Slice the chicken into bite size pieces
  2. Grate the courgette


  1. Cook the rice according to packet instructions
  2. Heat a wok over a medium to high heat, then add the olive oil
  3. Add the courgette to the wok and cook for 2 minutes
  4. Move the courgette to the side of the wok and add the chicken to fry for 5 minutes
  5. Combine the chicken and courgette, then add the paprika, curry powder and soy sauce, cook for 2 minutes
  6. Add the cooked rice to the wok and mix to combine
  7. Serve whilst hot
