Ingredients

Dried Apricot Halves
Water
Orange Juice
Plain soy yogurt
1. Put the apricots and water into a saucepan. Bring to the boil and then reduce the heat.  Cover and cook for 15 minutes, check and stir frequently. Leave the apricots to cool for 30 minutes. 

2. Put the apricots into a blender along with the orange juice and blend until smooth.

3. Scoop the yogurt into a bowl. Pour the fruit puree on top and stir gently to make a swirl.
